Potato Stars

No time left? Nothing in the fridge and you need a canapé or two? These little potato stars (or circles) are a doddle to make and look pretty as well. Only two main ingredients, potatoes and mayonnaise and you are sorted.

Ingredients

King Edward or Maris Piper potatoes or small new potatoes.

Olive oil

Salt and pepper

Mayonnaise, plain such as Hellmans, aioli or truffle flavoured (Truffle Hunter UK is delicious)

Cocktail sticks

Herbs for garnish, I used chives with pink peppercorns for a Christmas look

Small star cutter (optional - from Amazon)

Canapé spoons (optional)

Method

Pre heat oven to 200°c

Peel the potatoes, slice thickly and cut out shapes or stars (or simply slice if using new potatoes). Place on a baking sheet and drizzle with olive oil.

Cook for 15 minutes

Turn over and cook for 5 more minutes, or until soft.

Season and then serve, chill and reheat for 3 or 4 minutes until piping hot or open freeze and cook from frozen at 200°c for 5 minutes

Spear with a cocktail stick or bamboo stick and serve with the mayonnaise of your choice and chive ties with pink pepper corns or just a sprig of parsley.
