

Pea Blini with Smoked Trout
This is a very pretty little canapé. The pink trout looks very appetising on the bright green pea blini and the sugar snap peas add some lovely crunch. They are always popular when I make them. Pickled Radishes with Goats' Cheese or Whipped Feta
If you haven't tasted them before, pickled radishes are worth trying. They are crunchy and zingy, a flavour explosion in your mouth. Filled with creamy goats' cheese or whipped feta they make a great canapé. Just left as a plain pickled radish, they are brilliant with cured or smoked salmon or on a charcuterie platter. Bite-sized Strawberry and Pistachio Cheesecakes
I firmly believe you eat with your eyes and these cute little mouthfuls of strawberry and pistachio are pretty to look at and delicious to eat. Give them a try, they are not difficult and are stored in the freezer. Just pop a strawberry slice on top and they are ready to go. Great for summer parties. Sweet Potato with Whipped Feta
This canapé ticks all the boxes (well most of them anyway): it has a choice of two toppings, one veggie and one not. The base is sweet potato, so it is gluten free. The whipped feta makes a great dip on its own - beating it makes it wonderfully smooth and creamy. The canapé is easy and fairly quick to make, quite a bit ahead if necessary and the ingredients make into a tasty main course salad, so no waste. Whoops, I almost forgot, it’s delicious too.
