Stylish Smoked Salmon on Rye

A stunning canapé that never fails to impress. Serve with cool bubbles and this canapé exudes sophistication and style.

Rye bread is a great base as it delivers a delicious bite with the smoothness of the salmon and cucumber. Finish off with a slice of caperberry and your guests will be reaching for more.

These are simple to produce and can be made several hours ahead so you can relax and enjoy the party.

You will need a set of straight sided round cutters for this recipe. As mentioned previously, mine are by Kitchen Craft and are available from Amazon.

Ingredients

1 loaf Rye bread (I used a thin sliced variety)

100 gms smoked salmon

1 cucumber (the ridge variety are more flavourful if available)

Caperberries

Cream cheese

Lemon

Black Pepper

Method

Stamp out circles of the rye bread with a straight sided cutter (mine were approx 3cms in diameter).

Cut out the same diameter circles of smoked salmon and press lightly onto the bread.

Peel the cucumber and cut lengthways into thin slices. Pat dry and stamp out smaller circles of cucumber. Fix onto the smoked salmon with a dot of cream cheese. Put a slightly larger dot of cream cheese on top of the cucumber and place a slice of caperberry vertically on this.

Season with black pepper. Sprinkle with a little lemon juice before serving.

Pieces of preserved lemon can be substituted for the caperberries if they are not popular with your guests or a sprig of dill or anything else to help with the wow factor.
