Prawn Toasts

This recipe is a healthy take on the delicious prawn toasts we all love.  Instead of deep fried, the toasts are oven baked - so they can be enjoyed in great numbers with a clear conscience.  They freeze too which means you can feast on them anytime you want and they fit Canapease criteria of being made ahead.

 

Ingredients - makes 8

100g raw prawns 

1 tbsp egg white

2tsp chopped ginger

1 small spring onion, finely chopped

0.5 tbsp light soy sauce

Seasoning 

2-3 tbsp sesame seeds

2 thin slices white bread - the cheap stuff is fine here

Vegetable oil

Method

Heat oven to 190°c.

 

Grill bread lightly on one side only.   Cut off crusts and cut each slice into quarters.

 

Blitz the prawns, egg white, ginger, spring onion soy, salt and pepper until it forms a lumpy paste.

 

Spread the prawn mixture generously over the toasted side of each quarter, taking care to cover the corners.  

 

Sprinkle the sesame seeds over and spray the tops with oil.

 

Heat a tablespoon of vegetable oil on a sided baking sheet.  When the sheet is hot quickly put the prawn toasts on to it, untoasted side down and cook for 10 minutes until the prawns are cooked and the sesame seeds have become golden.

 

Serve immediately with sweet chilli sauce or cool and freeze.

 

To cook from frozen:  heat oven to 200°c  Put the frozen toasts onto an oiled sheet and cook for 10 minutes.
