Blue Cheese with Sugared Dates

If you like blue cheese this is a winner, a tangy bite of cheese complemented by the heat of the apricot and ginger chutney and the crunch and sweetness of the dates – and of course it could always be made with another cheese if you prefer. I use a blue variety called Castello. I have tried Stilton but it was too crumbly, so Castello, a creamy blue, was my choice. The recipe for the apricot chutney is given below, but shop bought would speed up preparation. Tortilla with Chorizo or Chilli Jam

This canapé is a great one to put together if you suddenly need a few nibbles. The ingredients are basics: eggs, potatoes, onions, olive oil, Parmesan, a sprig or two of parsley and Dijon mustard and if you are really pushed you could just use the first 4 ingredients. It’s an easy dish for lunch too, particularly if your frying pan isn’t good at being non-stick. The tortilla is cooked in a lined tin in the oven, so light on washing up as well. I had a beetroot and horseradish cream canapé in a rather smart restaurant a few weeks ago. It tasted good, but didn’t look so good as the beetroot had turned the horseradish cream pink. I gave this some thought and came up with the idea of using a dot of wasabi, Japanese horseradish, hidden under a crunchy piece of walnut – it’s very quick and easy and, of course, made ahead. Oven baked spring rolls

This is a very versatile recipe: it can be made with chicken or prawns or just with the vegetables. It is a great ‘make ahead’ canapé or starter, kept in the fridge for a few hours or frozen. Another bonus is that it is oven baked, so easy to cook and healthier too. It is also loved by all, from 4 to 89 years (in our family anyway). A winner on all fronts.
