Pea and Wasabi fritters

This recipe is from the Vegetarian Society, it's been changed a bit over time, and still works well. The original method involves last minute frying, but it can be cooked ahead and simply reheated. It will sit in the fridge overnight so no frying smells when your guests arrive. Mix, fry, top and eat, that's all there is to this simple canapé. Ingredients 60g plain flour 1 egg, beaten 225g petit pois, partially thawed 2 tsp Wasabi paste Seasoning 1 tbs chopped chives 1 tbs chopped parsley 2tsp finely grated ginger For frying: vegetable oil To serve: 6 sugar snap peas sliced across Wasabi paste Sea salt Optional: 1 pastry cutter, approx 3.5cms Method Add all the flavourings to the beaten egg

Raw Nori Sushi Rolls

Inspired by my recent visit to Limewood Spa last week, these raw sushi rolls are amazingly healthy and very tasty. Parsnip rice might sound a step too far, but trust me, these little wraps are delicious and so virtuous. Oven Roasted Tomato Soup & Cheese Straws

Warming tomato soup is a must for Firework Night and served in little coffee cups with crumbly cheese straw gives it a bit of class. Of course, if your friends are really hungry (or really cold) you can always use big mugs. I had forgotten how tasty and how easy cheese straws are to make. They don't need soup as an excuse to make them and you can vary flavours with different cheeses or spice them up with a light dusting of paprika or chilli powder. They freeze well too.
