Prawn Cocktail in Iceberg Cups

These simple little bites are forever popular. Quick to put together and quite happy sitting in the fridge for a few hours, they are the canapé I turn to when I want something that will be almost universally liked. I usually have a few prawns in the freezer and there is always mayonnaise and ketchup kicking around. Stir in a few drops of Tabasco, squeeze of lemon, sprinkle of cayenne and of course an iceberg lettuce. I would probably have to dash out to buy that, although little gem lettuce would make a good, but not so neat, substitute. Ingredients 80 gms Prawns 1 Iceberg lettuce (or 1-2 little gem lettuces, just use the smaller leaves, don’t cut the leaves) 3 tbsp mayonnaise 2 tsp tomat

Goats Cheese with Umeboshi

This little canapé can be thrown together in a flash, made ahead and is totally, mouthwateringly delicious. If you haven’t tasted umeboshi before, you are in for a treat. Many Japanese start the day with one of these little salted plums. They are supposed to have many health benefits, including being a cure for hangovers. I am not sure I could manage one first thing, but the zingy flavour of a small piece on top of a slice of creamy goats cheese is a totally wonderful combination. Mini Beef Empanadas

Not strictly authentic with filo pastry I agree, but it was impossible to roll the traditional dough thin enough for a canapé size empanada – and just think how much healthier this version is without any fat in the pastry.
