Prawn & Spanish Chorizo

I made this canapé last night for family, my most discerning critics. They said they were delicious. See what you think. They are possibly the quickest and easiest canapé yet and bursting with flavour. Plus, try just throwing everything in an oven proof dish (minus the skewers) for a speedy tapas-like starter. Serve with with crusty bread to mop up all the juices. Ingredients Raw King Prawns peeled Cooking chorizo Olive oil Paprika Lemon Parsley Bamboo skewers Method Cut the chorizo into slices, approximately 1/2cm thick. Oven baked carrots topped with feta are delicious and make an easy canapé. They also make a great starter, so take your pick from these two recipes. Roasting the carrots brings out their natural sweetness and the sesame seeds or pine nuts add a lovely crunch. Not strictly a canapé, but very quick and a bit of fun for Valentine’s Day. As with all these recipes, they will keep (for at least a week in an airtight tin), so they can easily be made in advance for a Valentine’s surprise. Ingredients 175gms good quality unsalted butter 225gms plain flour 60gms caster sugar 1tsp vanilla essence pinch of salt Method Cut butter into cubes and beat with the sugar until smooth. Oven Roasted Vegetables with Sour Cream & Chive Dip

These little skewers of winter vegetables are quick, easy and cheap and of course they are made ahead. The vegetables can be cooked and then stored in the fridge overnight ready to be threaded onto skewers and then warmed up when required. The off cuts of carrot, parsnip and sweet potato can be roasted alongside the cut cubes and with the addition of a well flavoured stock, put in a liquidiser and made into a delicious soup, so no waste.
